Go here
Control Panel\All Control Panel Items\Default Programs\Set Default Programs
Choose it in the left column and then go down at the bottom and click
"Set this program as default"

Doesnt work. Everytime I try to open a link in an email it asks for my default browser and despite ticking don't ask again it always brings up this bag screen every time.

I've heard a lot of people reporting the same thing with respect to email links.
Would you mind trying a brief experiment.
With IE set as your default browser......
Open IE and then click the email link.
Does it still prompt you?
It seems like that is the one function that for some reason IE can't wrestle away from Edge. Not sure why.

Nope, never get it.
We've discussed this at length in another thread elsewhere on this forum and it seems to be somehow related to the version of the mail client you are using.
Outlook 2013 does not seem to suffer this issue, while apparently version 2010 and older does.
IDK, but that seems to be the case. Which email client and version are you using?
