I made the update windows 8.1 at windows 10. And with windows 10 I once formated : no problem. I downloaded iso windows 10 to create DVD with my key windows 8.1 .
But today I want to formate with this DVD : it tells me key not good.

That's likely because your upgrade was done with what is called a "Digital Entitlement".
When you get to the portion of the clean install, where you are prompted for a product key simply select
"I don't have one" or "Skip"
Whichever link / option is presented to you.
The installation should complete from there and once the machine is connected to the internet, the installation should auto-activate itself again.
You shouldn't need or attempt to use any key that you may have previously recorded as your previous installation is already recorded with Microsoft for that machine.
