Why are there so many updates?

Why are there so many updates with Windows10? It is so disruptive. I have turned off automatic updates yet they still happen. I go on to do a simple task and have to wait ages whilst it updates. It recently shut down in the middle of me doing an assignment, when I looked at it again the following morning it was still only at 32%!!! It's ridiculous.
