Can't maximize icons in taskbar

I have Windows 10 that I purchased with the new Office 365 product. When I open a window/tab and minimize it to the taskbar and then try to maximize it, it either won't maximize or when I hover over the icon and it shows a preview window, I move my cursor to that preview window and it just disappears. No matter how many times I re-try, the same thing happens. Driving me and my family crazy. Can somebody help?

This happens if you have multiple monitors enabled but the monitor is not on or unplugged. Windows should recognize it and output only to your main monitor. But press Win + P and see if it thinks you have dual monitors running. If so, change it to PC screen only.

Thanks. My PC is set to PC screen only and I'm only running one monitor at a time anyway.
