If the original drive had Windows 10 on it [ i.e. you upgraded from 7 to 10 during the free upgrade period ], you can install Windows 10 over windows 7 again. When it asks for product key, click you don't have one. Microsoft will reassign your original digital key when windows 10 finishes installing and you next go online.
With regards to your question though, you'd need to install the apps on Windows 7 on the new SSD, then you can copy the data for the apps on windows 7, over to windows 10, by opening File Explorer and typing %localappdata% in the File Explorer address bar, hitting Enter then navigating to the apps data folders.
