How do I know what level of 802.11 (g, ac, ax) my laptop is actually currently using to communicate with my wireless access point ?

Your wireless card has serial numbers printed on the PCB that can be looked up for reference. In device manager there are also device ID numbers that can also be used.

Go to Settings > Network & Internet > WiFi and click on Hardware Properties. In the properties displayed it will show the 802.11 protocol in use.
