You might also want to try updating your email address directly in your Microsoft account settings. Go to Settings > Accounts > Your Info and select "Sign in with a local account instead" if you're currently using a Microsoft account to sign in. Then sign back in with your new email address.
If you prefer to keep using your Microsoft account, you can change your email address at account.microsoft.com under "Your Info" and "Manage how you sign in to Microsoft." This should update your sign-in details across your Windows device.
