How do I change environment variables with Windows 64 20H2?

Using SYSTEM from Control Panel now takes us to System\About from Settings.
There appears to be no way to change Environment variables such as PATH, etc.

I still get this panel when putting Environment variables in the Search box on the Taskbar:

While open it can be Pinned to the Taskbar.
